I thought these were for driving Motor On / Motor Off (MOMO) valves.  I don't see why a single pole single throw "spst" thermostat couldn't drive air conditioning, of course it would switch on when a temp was exceeded. I actually have no practical experience with any of this, it is just what seemed logical to me.  Please feel free to correct me.
